A useful distinction

A list of keys is easier to use when each key is connected with a clear action. “Space” alone says little to a new player. The instructions should also distinguish controls used during play from those used in menus.

Put it into practice

Write short action-and-input pairs and include the supported input methods. Check them against the current prototype. Keep the guide reachable during play so a player can revisit it without losing their state or restarting just to reread the opening screen.
